Considering that a major theme of knights in general is loyalty and honor, I don't think a part-time position would work out.

However, the Knights of Anathaeum do need to trade for outside supplies pretty regularly so I'm sure we could find a reason for a Smithy’s Apprentice to visit their monastery.
